Vegetable Briyani
My amma use to prepare this briyani & I love the preparation and taste very much. Eventhough she doesn’t use briyani rice it taste’s well. How far, I prepare variety in my receipe. When added added coconut milk it gives delicious taste to briyani.
Ingredients
Basmathi – 1 cup
Soya chunks -15 counts
Coconut milk – 1 cup
Carrot (small) – 1 no
Beans – 75 grams
Potato (small) -1 no
Peas – ½ cup
Onion – 2 nos
Tomato – 3 nos
G.Chilli - 4
Garlic & ginger – 1 tbsn
Coriander leves – 3 stalk
Mint leaves – 5 stalk
Cinnanamon – ½”
Clove - 3 nos
Cardamom – 2 nos
Bay leaves - small
Ani seed (annachi poo) – ½ piece
Chilly powder (kashmiri) – 2 tsp
Ghee – 1 tbs
Oil – 2 tbs
Salt – as per taste
Soak basmathi rice for abt 10 minutes & strain it. Chop all vegetables, keep aside. Grind 1 onion & 1 tomato separately in paste form. Soak soya chunks just for a while & squeeze it.Note: Kashmiri chilli gives good color to the briyani. Ratio of the vegetables & rice is 1 rice: 3 vegetable. When adding coconut milk, onion & tomato paste into briyani then, it comes little sticky.
