Carrot Halwa is always yummy. Vitamins may reduce when preparing it as Halwa but can enjoy the delicious taste.
Carrot(medium) -2 nos
Sugar - less than 1/2 cup
Milk - 1 cup
Elachi - 2 nos
badam - 5 counts
Pista - 5-7 counts
Here i have used Australian carrots. After grated, it comes to 1.75 cups.Wash & peel the carrot, then grate it. Boil the milk with ½ cup of water. After 2 minutes add grated carrot to the boiling milk, let it cook till it reduces its volume as thick consistency. Add a tsp ghee, roast cashew nuts to brown color. Now add cooked carrot, keep the stove in medium flame and smash it by ladle. Here add powdered elachi, sugar & stir it well. Add 3 tsp of ghee & roasted cashew into the mixture. When it gets off from the kadai switch off the stove. Garnish it with Vertically chopped badam & pista
Note: when it is in loose (thala thala) consistency remove the Halwa from the flame or else it will become hard & powdered.
